White sugar: about 17.3 oz (can be replaced with honey)

Yeast: Premier Blanc

Ripe mangoes which are yellow-peeled will be better for brewing because they can generate richer fragrance of cider. The mango should be sliced into small cubes to help it react with the yeast better because of the larger reaction surface.

Steps

  1. Prepare the appliances

Clean and dry the ALCHEMA machine. Connect the machine with ALCHEMA mobile app and start the UV disinfection process through the app.

  1. Prepare the ingredients

Utilize the 5-minute disinfection time to slice mango into cubics and prepare the sugar or honey.

  1. Add the ingredients

Make sure that ALCHEMA machine is in connection with ALCHEMA mobile app. The measurement value of weight should be “0” before you add any ingredients. Follow the instruction of recipe and add the ingredients in order: mango, sugar or honey, drinking water (to the “MAX” line), and yeast. Stir the ingredients to make them mixed properly.

  1. Wait for the ripeness

Let the ALCHEMA machine sit still for a few days and avoid direct exposure to sunshine. If you are curious about the brewing progress, you can open the “SIDE” cap of the machine and observe it through the transparent bottle.

  1. Harvest

ALCHEMA app will automatically send you to push notification that the cider is completed! Put the brewing bottle in the refrigerator and let the yeast to settle. After yeast settling, cautiously pour out the cider into your container. Cheers!
