Lesson 4 | How to twist existing recipes to reach my flavor preference?

Before you read this article, we highly suggest you read lesson 1 to 3 first. Lesson 1 is about how to use sugar; Lesson 2 is about how sugar and fruit affect what you ferment; Lesson 3 is about how different forms of fruit affect what you brew. After reading all three lessons, you will understand how ingredients work in fermentation and know how to adjust the ratio between ingredients in order to make the cider/mead you like the best. 

With ALCHEMA App, you can make a whole new recipe from a sketch or you can also twist an existing recipe to fit your own preference. We will suggest beginners start by twisting an existing recipe, which is simple and fast. Now we will tell you how you could twist the ALCHEMA Mead ( aka Honey wine ) recipe and make to your customized flavor. Let's get started!

Okay okay, put your smartphone down and finish this article first. We know that you are eager to try. We guarantee you that it won't take long. This is a preview of how to twist an existing recipe. First, open the App and click the house icon at the left corner of the screen to the recipe book. Search "Honey Wine (Mead)" recipe which is created by ALCHEMA, after entering the recipe card click the 『...』icon at the right bottom corner of the recipe and choose "twist the recipe". The ALCHEMA Honey Wine (Mead) is ABV 5% and Brix 12 (Read lesson 1 if you forget what is Brix). Keep this information in mind and you'll need it later. 

If you like fruity flavor | icedlow alcohol level、sparkling, high sweetness and acidity

If you like fruity flavor, you need to know where the fruit flavor comes from so you know how to make the cider/mead with fruity flavor. The fruit has a wide range of Brix and acidity. If the cider/mead Brix is closer to the fruit Brix, it will taste more like it and that lead to so-called fruity flavor. Usually, we will suggest set Brix at 12. 

For beginners, It is difficult to get high ABV% and keep the fruity flavor at the same time. We will suggest beginners start by making low ABV% cider/mead. Generally speaking, the low ABV% cider/mead drinks milder and tend to reserve more fruity flavor. We will recommend set ABV% at 5 which can keep the fruity flavor the best. 

Summary|Twist ALCHEMA Honey Wine (Mead) to Melomel (fruity honey wine)

  • Select ALCHEMA Honey Wine (Mead) recipe, click the 『...』botton at the right bottom corner and choose "twist the recipe"
  • Set ABV% at 5%
  • Set Brix at 12
  • Add 21 oz (600 grams) of the fruit you like
  • Add 21 oz (600 grams) of honey ( the actual amount might vary, follow the suggestion by the App)
  • Use Premier Cuvee yeast which can enhance the fruity flavor 
  • Store the melomel in an air-tight bottle after the fermentation is finished. Make sure the bottle can stand high pressure and let the melomel undergo a secondary fermentation. ( read lesson 1 for how to do secondary fermentation)
  • Drink it on rock and finish it before watery

If you like stronger alcohol taste | room temp.、high ABV%、still、dry

Let's see how to make the alcohol taste stronger if you like the obvious alcohol taste. Usually, the sweeter the cider/mead is, more fruity it will be. So if you want to get strong alcohol taste, you need to reduce the Brix, make the cider/mead drier. Set Brix at 4 can make pretty obvious alcohol taste. 

It is more difficult to create strong alcohol taste at low ABV%. It is better for beginners to start with making high ABV% cider/mead if you are looking for stronger alcohol taste. Since it is pretty straight forward, high ABV%, stronger alcohol taste. You can easily sense the alcohol. Set ABV% at 10%, you can taste the alcohol easily.

  • Select ALCHEMA Honey Wine (Mead) recipe, click the 『...』botton at the right bottom corner and choose "twist the recipe"
  • Set ABV% at 10% ( start from 10% and raise it gradually if you like it to be stronger)
  • Set Brix at 4
  • Add 21 oz (600 grams) of the fruit you like (optional)
  • Add 21 oz (600 grams) of honey ( the actual amount might vary, follow the suggestion by the App)
  • Use Premier Blanc yeast which enhances the alcohol taste
  • Store the mead in the ALCHEMA pitcher or the bottle with one-way-out valve
  • Drink it at room temp. ( Add ice if the alcohol taste is too strong)
